Default Does PR hate AMD CPUs or anything like that?

So I'm contemplating building a custom PC and I'm wondering if there's any CPUs I need to avoid or if PR is more stable with Intel or AMD stuff?

PR doesnt care about manufacturer. It only cares about high single thread performance. Historically Intel was better at that than AMD, but no idea how it looks these days. Looking at benchmarks, its mix between AMD and intel it seems: https://www.cpubenchmark.net/singleThread.html

How about stability? Any hardware I should avoid? Or are we pretty much safe with modern standard motherboards, Ryzen 5 type of CPU, stuff like that?

Only thing that PR hates are displays that do not support 800x600, but even that can be fixed in software/driver by adding resolution manually
